Ingredients

1 pkg New Zealand Spring Lamb Bone-in Shoulder or Banjo Cut Shoulder
2 tsp salt
1 tsp pepper
2 tbsp olive oil
Juice of 1/2 lemon
1 tbsp dried oregano
2 onions
2 garlic bulbs

Directions

  1. Preheat your oven to 350°F (175°C).
  2. Arrange the garlic bulbs and sliced onions evenly in the bottom of a large roasting pan.
  3. Rub the lamb shoulder with salt, pepper, olive oil, lemon juice, and oregano.
  4. Place the seasoned lamb shoulder on top of the garlic and onions. Add a small amount of water to the bottom of the pan to keep the meat moist. Cover the pan with foil and bake for approximately 4 hours, or until the lamb is tender and easily pulls apart with a fork.
  5. Once cooked, remove the lamb from the oven and let it rest for a few minutes. Shred the meat, prepare your favorite toppings, and serve for a delicious, family-friendly meal!
