Stuffed Rack of Lamb

Ingredients

1 New Zealand Spring Lamb® French Rack
1 pkg (113g) goat cheese
1 tbsp fresh mint, finely chopped
2 tbsp pine nuts
1 small garlic clove
2 tsp freshly grated lemon zest
1 tbsp capers (optional)
Sea salt and freshly ground black pepper
Olive oil for drizzling

Directions:

  1. Preheat oven to 350ºF (180ºC).
  2. In a medium bowl combine goat cheese, mint, pine nuts, garlic, lemon zest and capers, season with salt and pepper and form into a log that is approximately as wide as the length of the rack.
  3. Cut along the length of the rack, close to the bones to create a pocket.
  4. Place the goat cheese logo into the pocket and tie with kitchen twine at 2” intervals.
  5. Season with salt and pepper generously and drizzle with olive oil.
  6. Bake covered with aluminum foil for 60 minutes, remove foil the last 15 minutes of cooking.
  7. Remove from oven, cover and allow to rest for 15 minutes.
  8. Remove string from lamb and cut into double chops; serve with Roasted Pumpkin

Roasted Acorn Squash

Ingredients

1 large acorn squash, cut into 1 inch slices, seeds removed
2 tbsp maple syrup
1 tbsp olive oil
Salt and freshly ground black pepper
Olive oil for drizzling

Directions:

  1. Preheat oven to 375ªF (190ºC)
  2. Place squash slices on a rimmed sheet pan in a single layer, drizzle with olive oil, maple syrup, and salt, and pepper.
  3. Roast for 25 minutes on first side, then flip each slice over and roast for an additional 29 minutes, or until fork tender.
  4. Serve with Stuffed Rack of Lamb.
