Ingredients

1 New Zealand Spring Lamb®, short cut, bone in
1 ½ tsp salt
½ tsp black pepper

Rub
1 ½ tbsp fresh rosemary leaves, chopped
3 garlic cloves, peeled and minced
2 tbsp olive oil

Base
2 heads garlic, halved horizontally
Few sprigs rosemary (optional)

Gravy
4 tbsp plain flour
2 ½ cups beef broth, low sodium

Instructions

  1. Season the Lamb: Preheat oven to 200°C/400°F. Rub lamb with salt, pepper, rosemary, garlic, and oil.
  2. Base: Place garlic heads and rosemary in pan, set lamb on top.
  3. Roast: Roast 20 mins high heat, then reduce to 180°C/350°F. Roast ~20 mins per 500g until done.
  4. Rest: Cover lamb loosely with foil for 20–30 mins.
  5. Gravy: Heat pan drippings, stir in flour, then whisk in beef broth. Simmer until thick.
