Ingredients for Lamb
8 New Zealand Spring Lamb Chops (about 1.15 kg)
225 g | 8 oz Greek yogurt
3 tablespoons fresh lemon juice
1-piece fresh ginger root, peeled and grated (about 3-inches)
2 cloves of garlic, minced
2 tablespoons honey
1 tablespoon garam masala
2 teaspoons sweet paprika
2 teaspoons ground cumin
1/4 teaspoon ground nutmeg
Coarse salt, to taste
6 sprigs fresh thyme
1 tablespoon oil, to brush grill grate
Ingredients for Spinach and Pea Salad
550 g | 19 oz fresh baby spinach leaves
225 g | 8 oz frozen baby green peas, thawed
75 ml | 2 1/2 fl oz good-quality olive oil
55 ml | 2 fl oz lemon juice
1 tablespoon Dijon mustard
1/2 teaspoon dried thyme leaves
Salt, to taste
Freshly ground black pepper, to taste

Combine spinach, greens, and peas in salad bowl. In small bowl, combine olive oil, lemon juice, mustard, thyme, salt and pepper and whisk to blend. Just before serving, pour dressing over salad and toss gently to coat.
