1 New Zealand Spring Lamb Frenched Rack
Lamb Marinade
2 tbsp Dijon mustard
2 tbsp balsamic vinegar
2 cloves garlic, peeled and finely chopped
½ tsp each salt and freshly ground black pepper
½ cup olive oil
2 tbsp fresh basil, sliced into thin strips
Vegetable Couscous
2 tbsp olive oil
1 red and 1 yellow bell pepper, stems removed and cut into medium size pieces
1 medium onion, peeled and cut into thin wedges
1 Roma tomato, cut in half and cut into ¼” slices
2 tsp balsamic vinegar
1 clove garlic, peeled and crushed
Pinch red chili flakes (optional)
Salt and freshly ground pepper
1 cup cooked couscous
Fresh basil for garnish (optional)
