Ingredients

1 New Zealand Spring Lamb®, short cut, bone in
2 cups fresh cranberries (or 1 cup dried)
3 tbsp cranberry jelly
1 cup red wine
2 cups chicken stock
3 tbsp balsamic vinegar
1 tbsp brown sugar
2 onions, peeled and sliced into rings
5 sprigs fresh rosemary
4 cloves garlic, peeled and sliced
½ cup fresh mint, chopped Kosher salt, to taste coarse black pepper, to taste

Instructions

  1. Prepare the lamb: Preheat oven to 180°C/350°F. Score lamb, season, and insert garlic. Place on onions and rosemary in pan.
  2. Cranberry marinade/glaze: simmer cranberries, jelly, wine, stock, vinegar, and sugar for 10-15 mins. Reserve half.
  3. Roast: pour sauce over lamb. Cover with foil and roast 2.5–3 hrs, basting. Remove foil last 30–40 mins, brush glaze.
  4. Rest and finish: Rest 20 mins, reduce juices if needed, sprinkle mint before carving.
