Simple Roasted Leg of Lamb

Ingredients

1 New Zealand Spring Lamb Leg
2 cloves garlic, peeled and slivered
900 g (2 lbs) large potatoes, cut into chunks
2 leeks, trimmed, sliced into ½” disks
1 lemon, quartered
2 dried bay leaves, crumbled
3 tbsp olive oil
Salt and freshly ground black pepper

Directions

  1. Preheat oven to 375ºF
  2. Pat lamb dry with paper towels and place in a large roasting pan, cut 3 or 4 horizontal slits on top of leg, press garlic slivers randomly in slits, arrange potatoes, leeks, lemon wedges and bay leaf around the meat; drizzle with olive oil and season with salt and pepper
  3. Place into oven and roast until an internal temperature of 135ºF is reached for medium – about 1 ½ hours, or until desired doneness
  4. Remove from oven, cover, and allow to rest for 15 minutes prior to serving
