1 New Zealand Spring Lamb Boneless Leg, cut into 1” cubes
4 lemons
½ cup olive oil
6 cloves garlic, minced
2 tbsp dried oregano
½ tsp red pepper flakes (optional)
1 tsp sea salt
1 tsp freshly ground black pepper
8 wooden or metal skewers (if using wooden skewers, soak in water for
10 minutes prior to assembling the skewers)
