It is typically a larger cut of tender meat, making it ideal for feeding a crowd or hosting special gatherings. Its impressive size and visual appeal make it a striking centrepiece that is sure to impress your dinner guests and create a memorable dining experience.

Lamb’s shoulder is also relatively easy to prepare. Compared to other cuts of lamb, such as lamb leg, the rack or loin, lamb shoulder is more affordable, making it an economical choice for home cooks looking to create a stunning meal without breaking the bank. Its affordability combined with its impressive presentation makes it a popular option for any kind of dinner gathering.

This recipe calls for pairings that will complement the subtle, yet rich taste of your lamb shoulders so to accompany your roast try an array of wine-roasted, fresh herbs and vegetables including carrots, delicious mashed potatoes and gravy, each chosen for its ability to enhance the flavours of your delicious lamb roast.

To fully marry these ingredients with your lamb meat, we turn to the pantry for a few essential staples. Including, but not limited to, olive oil which lends richness and depth to the dish, while a touch of dry white wine adds a slight acidity and brightness. Salt and freshly ground black pepper, used generously to season both the lamb and the vegetables, ensure that every bite is bursting with flavour.

And the top secret, is what makes this the best-roasted lamb recipe? Be sure to thoroughly prepare it. So, before you get to cooking, with a sharp knife make several incisions into the lamb shoulder, allowing the seasonings to infuse the meat and then let it sit and marinate. Next, you’re going to want to season the lamb generously with salt and pepper on both sides, to ensure that every inch is coated in this essential blend of seasonings.

Before you pop your lamb shoulder into the oven, drizzle two tablespoons of olive oil over the lamb, and use your hands to incorporate it into the meat and ensure that it is evenly coated. This step not only adds richness and flavour but also helps to create a beautiful golden crust as the lamb roasts in the oven. Trust us…you’re not going to want to miss out on this step.

While your slow-roasted lamb shoulder marinates in its flavorful bath, turn your attention to your vegetables. In a large roasting pan, arrange the carrots, celery, shallots, garlic, and rosemary sprigs, creating a colourful bed for our lamb to rest upon. Drizzle the remaining olive oil over the vegetables, season them with salt and pepper, and toss them gently to ensure that they are evenly coated.

When your slow-roasting lamb is finally ready, allow the lamb to rest for at least 10 minutes. This will allow the lamb juices to redistribute through the meat and ensure that each bite is tender and succulent. This simple step can make all the difference in the final texture and flavour of your dish, so resist the temptation to carve into the lamb too soon and let it rest undisturbed.

Once that lamb shoulder has had a chance to rest and soak up all those incredible flavours, it’s time that the rolled boneless lamb shoulder is served alongside the gorgeous veggies you’ve lovingly prepared.
